Lou Pécou

Lou Pécou is an artisanal pizzeria in Halifax's North End, founded by pizzaiolo Cédric Toullec. The restaurant operates at the intersection of European culinary tradition and Nova Scotia's local farming community, built on slow-fermented dough, organic and heritage grains, house-made pasta, and a curated selection of natural and biodynamic wines. Ranked among the world's top 100 pizza chefs in both 2025 and 2026, Toullec doesn't just make pizza. He practices it as a discipline – in the same spirit as the artisans who built cathedrals and the chefs who redefined what a plate can say.
The name comes from a Provençale word for the small stem of a fruit – the quiet sign that tells you something was grown with care, picked at the right moment, and truly connected to its land. It's a philosophy as much as it is a name.
When Lou Pécou came to HRVST, the food had already earned its place on the world stage. The brand hadn't caught up yet.

The existing brand didn't reflect the depth, discipline, or soul behind what he was building in Halifax. The ask was simple in theory, hard in practice: build a brand that carries the same weight as the work. Something that could stand next to the best in the world without apology, feels quietly confident, and earns its authority through honesty rather than hype.
The identity would need to extend across every guest touchpoint – from the window signage down to the pizza box – without losing its restraint at any point. And it needed to be built to last.
The strategy.We started with the story, not the aesthetics. Lou Pécou isn't a brand that wants to be seen – it's a brand that wants to be understood.
The visual identity was built around a handwritten primary wordmark – loose and expressive but grounded, the kind of mark that looks like it was earned rather than designed. Alongside it, a symbol depicting the top view of a tomato stem, echoing the fluid, organic shapes of the wordmark and rooting the identity in the same philosophy as the name itself. An intimate monogram rounds out the logo suite. The colour palette is deep and earthy: dark chocolate, warm cream, olive, and a restrained brick red as accent. Typography pairs a refined serif for headings with a clean sans-serif for body copy – thoughtful without being precious.
From there, a complete identity package was built across every touchpoint: pizza box, matchbooks, menus, bags, signage, and apparel. All of it following the same visual logic – confident, minimal, and more interesting the closer you look.
The solution.Lou Pécou now has a brand that matches its ambitions and its accolades – one that communicates the same level of care and discipline as the food it represents.
The details are where it lives. The pizza box has a hidden illustration that reveals itself as the pizza disappears, closing with a brand note and Toullec's own signature. The matchbook opens to a quiet "Hi there, beautiful." The dessert menu explains what "Lou Pécou" actually means – and signs off the same way. Small moments, but the right ones.
Across every other touchpoint, the visual language stays consistent: restrained, warm, and grounded in the same quiet confidence that defines the restaurant itself.
The identity is calm enough to let the food speak, and considered enough to signal that nothing here happened by accident. This was never about making Lou Pécou look better. It was about making it recognizable for what it already is.
